Small spelt flour is a naturally low gluten flour, which can be used in both sweet and savory recipes. The term T150 means that it is an integral flour, obtained from whole grains. The grains are stone ground in order to preserve all the qualities of the grain, and to offer an exceptional flour, which is both nutritious and respectful of the environment. The stone millstone reproduces the ancestral gesture of a traditional flour which results in a milling richer in vitamins and minerals, with the natural smell of wheat. This technique also preserves the vitamins in the germ of the grain and the protein base of the bran: the flour remains alive! This is the particularity of the stone flour process. Spelt flour is more digestible than wheat because of its low gluten content and its high fiber content. We are also proud to offer a 100% French product.
