  • 150 g firm turmeric tofu
  • 150 g silken tofu
  • 2 tbsp oil (olive, rapeseed, high-oleic sunflower, or deodorized coconut)
  • A pinch of fleur de sel
  • Sourdough bread slices
  • Vegan green pesto
  • Baby spinach, lamb's lettuce, or arugula
  • Seeds of your choice: pumpkin, hemp, sunflower, sesame

Recipe

  1. Quickly blend the firm tofu using a food processor or blender — 1 to 2 seconds is enough to get a chopped tofu texture.

  2. In a saucepan over low heat, warm a drizzle of oil, add the crumbled tofu, then stir in the silken tofu and mix well.

  3. Spread the green pesto on the sourdough bread slices. Add the scrambled tofu on top, followed by the baby greens. Sprinkle with seeds and drizzle with olive oil.
