Marinated tofu & eggplant skewers

- 1 eggplant
- 1 block of olive tofu (Kazidomi)
- 6 cherry tomatoes
For the Marinade
- 1 tbsp peanut butter (Kazidomi)
- 3 tbsp rapeseed oil (Kazidomi)
- 1 tbsp tamari sauce (Kazidomi)
- 1 tbsp apple cider vinegar (Kazidomi)
- 1 tsp brown miso
- Pepper

Recipe
Prepare the marinade by mixing all the ingredients in a bowl. Add a little water if the consistency is too thick. Wash the eggplant and cut it into medium-sized cubes. Cut the tofu into cubes of the same size. Place the eggplant and tofu in a dish and pour the marinade over them. Mix well to coat all pieces evenly and let marinate in the refrigerator for at least 30 minutes.
Preheat the oven to 190°C (fan-assisted). Place a sheet of parchment paper on a baking tray or dish. Assemble the skewers by alternating a tofu cube, an eggplant piece, and a cherry tomato. Arrange the skewers on the parchment paper. Bake for 25 to 30 minutes, turning the skewers halfway through cooking. The skewers can also be grilled on a barbecue or plancha. Serve with a fresh green salad.
