Thanks to coconut sugar, almond flour, and plant-based yogurt, this recipe is both light and indulgent. Perfect for guilt-free enjoyment, it will delight the whole family with its deliciously creamy almond filling.

  1. Preheat the oven to 200°C.
  2. In a mixing bowl, combine the almond flour, coconut sugar, plant-based yogurt, vanilla extract, and eggs. Whisk until the mixture is smooth.
  3. Place the first puff pastry sheet on a baking tray lined with parchment paper. Spread the almond cream evenly, leaving about 2 cm of border free.
  4. Add a small charm (or a whole almond) into the cream for tradition.
  5. Cover with the second puff pastry sheet and seal the edges by gently pressing with your fingers or a fork.
  6. Brush the galette with the yolk of the last egg for a golden finish. Lightly score the surface with patterns using the tip of a knife (without cutting through).
  7. Bake for 25 to 30 minutes at 200°C, until golden and crisp.
  8. Let cool slightly before serving.
