No need to deprive yourself for Epiphany! This healthy version of the King’s Cake highlights natural and balanced ingredients. Thanks to coconut sugar, almond flour, and plant-based yogurt, this recipe is both light and indulgent. Perfect for guilt-free enjoyment, it will delight the whole family with its deliciously creamy almond filling.
Ingredients
- 2 puff pastry sheets (opt for a version without additives)
- 125 g of almond flour
- 60 g of coconut sugar
- 3 eggs
- 100 g of plant-based yogurt (almond or coconut)
- A few drops of vanilla extract
Recipe
- Preheat the oven to 200°C.
- In a mixing bowl, combine the almond flour, coconut sugar, plant-based yogurt, vanilla extract, and eggs. Whisk until the mixture is smooth.
- Place the first puff pastry sheet on a baking tray lined with parchment paper. Spread the almond cream evenly, leaving about 2 cm of border free.
- Add a small charm (or a whole almond) into the cream for tradition.
- Cover with the second puff pastry sheet and seal the edges by gently pressing with your fingers or a fork.
- Brush the galette with the yolk of the last egg for a golden finish. Lightly score the surface with patterns using the tip of a knife (without cutting through).
- Bake for 25 to 30 minutes at 200°C, until golden and crisp.
- Let cool slightly before serving.
