Thanks to coconut sugar, almond flour, and plant-based yogurt, this recipe is both light and indulgent. Perfect for guilt-free enjoyment, it will delight the whole family with its deliciously creamy almond filling.
In a mixing bowl, combine the almond flour, coconut sugar, plant-based yogurt, vanilla extract, and eggs. Whisk until the mixture is smooth.
Place the first puff pastry sheet on a baking tray lined with parchment paper. Spread the almond cream evenly, leaving about 2 cm of border free.
Add a small charm (or a whole almond) into the cream for tradition.
Cover with the second puff pastry sheet and seal the edges by gently pressing with your fingers or a fork.
Brush the galette with the yolk of the last egg for a golden finish. Lightly score the surface with patterns using the tip of a knife (without cutting through).
