Vegan Wellington

Recreate this vegan mushroom Wellington recipe! A perfect dish for the holidays.
Ingredients
- 750g of mushrooms
- 200g of sweet potatoes
- 2 cloves of garlic, chopped
- 1 onion, chopped
- 3 handfuls of spinach
- 1 rectangular puff pastry
- 2 tsp of thyme
- Olive oil
- Salt and pepper
Recipe
- Preheat the oven to 200°C.
- Sauté the onions and garlic in 2 tablespoons of oil.
- Add the chopped sweet potatoes and 100ml of water.
- Cover and cook for 10 minutes.
- Add the mushrooms and thyme.
- Cook for 15 to 20 minutes over low heat.
- Add the spinach and cook for another 2 minutes.
- Roll out the puff pastry and place the filling in the center.
- Quickly fold the pastry over the filling and flip it over.
- Use a sharp knife to create a pattern on the pastry.
- Bake for 35 minutes, checking after 20 minutes to ensure even cooking.
