Ingredients

  • 750g of mushrooms
  • 200g of sweet potatoes
  • 2 cloves of garlic, chopped
  • 1 onion, chopped
  • 3 handfuls of spinach
  • 1 rectangular puff pastry
  • 2 tsp of thyme
  • Olive oil
  • Salt and pepper

Recipe

  1. Preheat the oven to 200°C.
  2. Sauté the onions and garlic in 2 tablespoons of oil.
  3. Add the chopped sweet potatoes and 100ml of water.
  4. Cover and cook for 10 minutes.
  5. Add the mushrooms and thyme.
  6. Cook for 15 to 20 minutes over low heat.
  7. Add the spinach and cook for another 2 minutes.
  8. Roll out the puff pastry and place the filling in the center.
  9. Quickly fold the pastry over the filling and flip it over.
  10. Use a sharp knife to create a pattern on the pastry.
  11. Bake for 35 minutes, checking after 20 minutes to ensure even cooking.
