Low glycemic chocolate croissant, dairy-free and gluten-free

Ingredients for 1 chocolate croissant:
- 2 whole grain rice papers
- 2 eggs
- 2 squares of dark chocolate
- 1 small cup of coconut plant-based drink
- 1 tsp of yacon syrup
Recipe
1. In a bowl, mix the eggs, coconut plant-based drink, and yacon syrup to make a marinade.
2. Soak the rice papers in the marinade until they become soft.
3. Place 2 to 4 squares of dark chocolate in the center of each rice paper. Fold the edges to form a chocolate croissant.
4. Place the chocolate croissants on a baking tray and bake at 180°C for 15 minutes, until golden brown.
