The Lupulus Brewery, originally established in 2004 to supply the neighboring bistro with malted beverages in kegs, evolved in 2007 to create a new beer available in champagne-style bottles and kegs. The brewers aimed to craft a beer deeply rooted in tradition while infusing it with unique and innovative olfactory and gustatory notes, utilizing modern equipment. The "Lupulus" yeast contributes citrus and spicy undertones to the beer, resulting in a rather dry finish on the palate, making it less sweet than most Belgian tripels.
