In a powerful blender or using an immersion blender, blend the pistachios with the Greek yogurt and maple syrup until smooth and homogeneous.
Spoon the mixture into silicone muffin molds or small ramekins. Slightly smooth the top with a spoon.
Place in the freezer for 3 to 4 hours, until the cups are firm.
