Ingredients
- 2 cups of buckwheat flour
- 1 cup of chestnut flour
- 110g of coconut oil
- 80g of coconut sugar
- 3 tbsp of honey
- 2 eggs
- 1 tsp of cocoa powder
- 1/2 tsp of ground ginger
- 1 tsp of gingerbread spice mix
- 2 tsp of baking soda
Recipe
- In a bowl, mix the dry ingredients before adding the remaining ingredients.
- Let the dough rest in the refrigerator for about 1 hour.
- Using cookie cutters, shape the dough into small cookies and bake at 180°C (350°F) for 9–10 minutes.
- Enjoy with a glass of milk by the fire!
