Ingredients

  • 200 g lentil penne
  • 1 zucchini
  • 1 red bell pepper
  • 200 g cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the pesto:

  • 1 bunch of fresh basil
  • 30 g pine nuts
  • 50 g grated Parmesan cheese
  • 100 ml olive oil
  • 1 garlic clove

Recipe

  1. Cook the lentil penne according to the package instructions.
  2. Meanwhile, dice the zucchini and bell pepper, then sauté them in olive oil until tender.
  3. Add the halved cherry tomatoes and cook for another 5 minutes. Season with salt and pepper.
  4. For the pesto, blend the basil, pine nuts, Parmesan, garlic, and olive oil until smooth.
  5. Mix the cooked pasta with the vegetable sauce and pesto.
  6. Serve hot and enjoy immediately.
