Ingredients
- 400 ml coconut milk (17% fat)
- 400 g sliced button mushrooms
- 1 tablespoon crunchy peanut butter
- 1 packet of miso
- 2 tablespoons tamari sauce
- 100 g Udon noodles
- 1 sliced onion
- Black sesame seeds
Recipe
- Cook the Udon noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the coconut milk over medium heat. Add the sliced onion and button mushrooms. Cook for 3 to 4 minutes until the mushrooms are tender.
- Stir in the peanut butter, miso, and tamari sauce. Mix well to dissolve the miso and create a smooth soup. Simmer over low heat for another 2 to 3 minutes.
- Divide the Udon noodles into bowls. Pour the hot mushroom soup over the noodles.
- Sprinkle with black sesame seeds for a crunchy touch.
- Serve immediately and enjoy your ramen.
