This snowy Yule log with tofu and coconut milk is a light and vegan alternative to traditional Christmas desserts. Blend all the ingredients together, pour the mixture into a saucepan, and bring to a boil.
Cook for 2 minutes while stirring constantly with a wooden spoon. Pour into a Yule log or loaf pan, optionally lined with plastic wrap.
Let cool at room temperature, then refrigerate for 4 hours. Unmold onto a large platter and cover with shredded coconut. Perfect with a raspberry coulis.
