This snowy Yule log with tofu and coconut milk is a light and vegan alternative to traditional Christmas desserts.   • 800 g silken tofu
  • 400 ml coconut milk
  • 150 g powdered coconut sugar
  • 1 tablespoon natural vanilla extract
  • 3 tablespoons agar agar
  • shredded coconut for decoration

Recipe

  1. Blend all the ingredients together, pour the mixture into a saucepan, and bring to a boil.
  2. Cook for 2 minutes while stirring constantly with a wooden spoon. Pour into a Yule log or loaf pan, optionally lined with plastic wrap.
  3. Let cool at room temperature, then refrigerate for 4 hours. Unmold onto a large platter and cover with shredded coconut. Perfect with a raspberry coulis.
