What if, this year, we swapped the traditional Yule log for a more indulgent and lighter alternative? We've found the best recipe for you to enjoy without feeling heavy at the end of the meal.
Ingredients

For the cake:
- 240g whole wheat flour (T80)
- 2-3 finely grated carrots
- 80g maple syrup (or another sweetener of choice)
- 100g nut butter (here: almond, pecan & chai)
- 200ml plant-based yogurt
- 1 packet of baking powder
- 1 tsp vanilla extract
- A pinch of salt

For the cream:
- 400ml coconut cream
- 60g plant-based yogurt
- 3 tsp maple syrup
- Coconut oil
- Vanilla extract
Recipe
For the cake:
- Preheat the oven to 180°C (350°F).
- Mix the dry ingredients together.
- In a separate bowl, mix the maple syrup, nut butter, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture.
- Add the grated carrots.
- Once everything is mixed, pour the batter into a lined baking pan and bake for 50 minutes.
For the cream:
- Chill the coconut cream beforehand.
- After refrigeration, scoop out the thick part of the coconut cream and leave the liquid behind.
- Blend the thick coconut cream with the yogurt, maple syrup, a bit of melted coconut oil, and vanilla extract.
- Spread the cream on the cooled cake and enjoy!
