Ingredients
For about 6 biscuits:
- 2 cups of puffed quinoa
- 1 cup of melted dark chocolate (1 bar)
- 2 heaping tablespoons of peanut butter
- 1/4 cup coconut oil
Recipe
- Melt the dark chocolate with the coconut oil in a double boiler.
- In a large bowl, mix the puffed quinoa with the melted chocolate, peanut butter, and melted coconut oil. Stir until you have a well-blended mixture.
- Pour the mixture into small individual molds (a simple loaf pan will also work), pressing lightly to create an even thickness.
- Place the mold(s) in the freezer and let rest for 1 hour for the mixture to harden.
- After the time has passed, remove the mold and cut into bars or squares, or remove each biscuit from its individual mold. Your gluten-free puffed cereal biscuits are ready to be enjoyed!
