Clearspring's Japanese noodles are made according to traditional recipes. These noodles are produced by a family of artisans who cut them and then let them air dry slowly (3 days), which concentrates their flavor. They can be used year round in a wide variety of Asian and European dishes, such as in a hot miso broth, sautéed with vegetables, or in delicious summer salads.
