Chai-koekjes met pecannoten

Heerlijke koekjes op basis van haver met een romige kern met Chaï-smaak
Ingrediënten
For the cookies:
- 3 cups of oats
- 1 ½ cups of flour
- ½ cup of coconut sugar
- 3 tbsp ground flaxseeds
- 9 tbsp water
- 160g almond and pecan butter with chai flavor
- 70g coconut oil
- 2 tsp baking powder
For the cream:
- 100g vegan cream cheese
- 150g coconut cream (the solid part, without the liquid)
- 1 tbsp chai butter
- 1 tbsp maple syrup
Recept
For the cookies:
- Preheat the oven to 175°C (350°F).
- Mix the ground flaxseeds with water and let it sit for a few minutes.
- In a large bowl, combine all the dry ingredients, then add the almond and pecan butter, coconut oil, and the flaxseed mixture.
- Adjust the dough with a bit of water if it's too dry.
- Shape the cookies and place them on a baking sheet lined with parchment paper.
- Bake in the oven for 15 minutes at 175°C (350°F). Let them cool.
For the cream:
- Whip the coconut cream with the maple syrup and chai butter until smooth.
- Gradually add the vegan cream cheese while continuing to beat.
- Spread the cream on the cooled cookies or use it to assemble cookie sandwiches.
